This session will explore how the process of preparing meals impacts the environment around us and how this process — from purchase to plate — could be examined more carefully. The following questions will be posed: How does the environment around us (resulting from history, culture, tradition and modern societal values) influence how we view food and its consumption? Why is it important to think thoughtfully about food consumption? How can we make positive, thoughtful food purchases? How can we make the most of our ingredients? What happens after we consume what is on our plate? The workshop will include a presentation, an urban foraging walk and an interactive cooking demonstration.
